Hiyayakko and apple/ cucumber salad in daikon soy - 03 Sep 2009
Decided to get into the kitchen and see what's available to whip up something light. Bought the daikon soy dressing recently so will use it for an apple/ cucumber salad. Shredded red and green apples rinsed with salt water to prevent from oxidizing, and half a telegraph cucumber (shredded). Combine all shredded apples and cucumber, and toss with daikon soy. I thought too much cucumbers were added, but J liked it and finished the whole bowl. It was pretty crisp and refreshing though.
Hiyayakko = cold tofu is usually topped with several condiments other than soy, chopped spring onion and grated ginger. Some places, bonito flakes and nori (japanese seaweed) are added. Tried both versions... one with everything and another the above (tofu with soy, spring onion and grated ginger), and preferred the plainer one as shown. The plainer version brought out the fragrance of all the ingredients... Having bonito and seaweed made the dish too salty as they soak up the soy and clump together, making separation difficult.
